Raw Cacao, Date and Pecan Bites

I'm always dying for something sweet in the evening but want to steer clear of anything high in sugar, especially when I spend my days tasting every new creation in the pastry kitchen. After testing a couple of recipes from the Happy Pear Cookbook, I decided to come up with something myself using similar ingredients. I developed these "healthy balls" or as I wisely renamed them; Raw Cacao, Date and Pecan bites, using only six simple ingredients - medjool dates, date syrup, pecans, porridge oats, raw cacao powder and organic white chocolate.

The recipe couldn't be easier.
In a food blender, simply blitz....

340g Pitted Medjool dates
5 tbsp Date syrup (or maple syrup)
150g Pecan Nuts
100g Raw Cacao powder
100g Porridge Oats

... Once blitzed, roll about a tablespoon of the mix into mini balls. Roll the balls in a small amount of raw cacao powder. (It can be pricey so to re-use the cacao powder simply sift it back into the pack). I like to half dip the bites in organic white chocolate. To do so, melt your chocolate over a bain-marie, dip the bites and allow them to set on a sheet of baking paper. Once set, you can store the bites in the fridge for up to one week in a sealed container.

Check out the Happy Pear Cookbook or website for so many more recipes for healthy treats and snacks. Their salads are unbelievably good too - you'll thank me later ;)

Avocado Chocolate Mousse

Everyone seems to pull a incredibly unimpressed face when I mention avocado mousse. They seem to imagine a green guacamole type dessert that doesn't sound particularly appetizing, but, they couldn't be more wrong. The avocado simply works as a thickening agent creating a vegan alternative to a chilled chocolate pudding or mousse. The dessert is particularly smooth in texture and the intense chocolaty flavour will deter you from ever going back to the original. The dessert is made with purely natural ingredients so with only four more days of Healthy January to go, why not hold out and give this tasty treat a go.

You will need

2 ripe avocados
Half cup of coconut milk
Half cup of raw (or regular) cocoa powder
6 tbsp Honey (may need more - add to taste)
Small handful of desiccated coconut
2 tbsp Raw Cocoa Nibs

What to do...

First, you will need to peel, de-stone and blend the avocados. I find using the hand blender the easiest.

In a separate bowl, gently whisk the coconut milk and cocoa powder until combined. Add the avocado and honey to the mix and whisk again until incorporated.

You can now add your desiccated coconut and cocoa nibs before piping the mixture into the glasses or dishes you plan to serve it in.

Once piped, refrigerate overnight for best results or alternatively for a minimum of four hours. I like to serve the mousse with something a little tart and fruity on top - frozen mixed berries or orange or grapefruit segments work really well.

Spiced Christmas Hot Chocolate

I love nothing more than curling up in front of the fire with a great big mug of hot chocolate at Christmas time. To make my hot chocolate that little bit extra special, I add a few surprises to give it a delicious festive kick. Go on, throw on that onesie and pick your favourite festive flick.

- Image via Tumblr -

For four large mugs you will need...

3 mugs of milk
1 cup of whipping cream
6 tbsp Cadbury's drinking chocolate
50g dark chocolate
Half tsp nutmeg
Half tsp of hot chilli powder
1 cinnamon stick
Large Marshmallows (to serve)

To make the hot chocolate...

In a saucepan heat your milk, cream and cinnamon stick. Add the drinking chocolate and dark chocolate and stir until combined. Once at the desired temperature, add the nutmeg and chilli powder. Remove the cinnamon stick and serve with heaps of large marshmallows (not the crappy small kind!).

Pavlova Gateaux with Chocolate Mousse, Fresh Cream & Berries

Dad's favourite dessert is pavlova loaded with fresh cream and strawberries but he also loves dark chocolate. For his birthday this year, to combine his two favourites, I decided to make a meringue gateaux filled with dark chocolate mousse and strawberries, topped with fresh cream, berries and dark chocolate shavings.

Ingredients

FOR THE MERINGUE

9 Egg Whites
450g Caster Sugar
Lemon Juice or white vinegar (to wipe bowl)

FOR THE CHOCOLATE MOUSSE

200g Dark Chocolate
2 tbsp Water
6 Eggs (separate and keep 6 whites but only 3 yolks)
Pinch of Salt

EXTRAS

250ml Cream (whipped)
Handful Dark Chocolate Shavings
Punnet of Fresh Strawberries (washed and sliced)

Method

FOR THE MERINGUE

1) Preheat your oven to 100C/225F/Gas Mark .25, and line two flat bakng trays with greaseproof paper. Trace around a small plate (approx 8 inches round) with a pencil to give yourself piping guidelines when the mixture is ready.

2) Whisk the egg whites on high in your electric mixer until they rise, become glossy and form a peak when the whisk is lifted.

3) Add  half your sugar and again, beat on high until the mixture forms a peak when the beater is lifted. When this occurs, add the remaining sugar and whisk on high for the final time until, once again, the mixture forms a peak when the beater is lifted.

4) Fill your piping bag fitted with a large star nozzle with the mix and pipe onto your baking tray filling the two circles you traced earlier. If you have some mix left over after this, pipe small meringe shapes, as you would icing on top of a cupcake - you can use these to decorate or to simply eat when they come out of the oven instead of having to wait for your masterpiece !

5) Bake the small meringues for 45 minutes and the two large for 1 hour 30 mins. Once done, remove from the oven and allow to cool fully before assembling.

FOR THE CHOCOLATE MOUSSE

1) Using your electric mixer, whisk the egg whites and salt on high, like you did for the meringue, until the mixture becomes glossy and peaks when the whisk is lifted.

2) In a separate bowl, melt the chocolate over a pot of simmering water. Once melted, add the egg yolks and mix. Then set the mixture aside to cool for 10 minutes.

3) After the 10 minutes are up, add the egg white mixture to the chocolate mixture, one spoon and a time and stir -always in the same direction.

4) Pour half the mixture into a bowl, cover and chill in the fridge for at least 5 hours before serving. You can pour the remaining mix into glasses to chill. You can serve these separatly to the cake.

TO ASSEMBLE...

Make a gateaux with the meringues, using the chocolate mousse as the filling. Spread the whipped cream on top and decorate with the mini meringues, berries and chocolate shavings.

Chocolate Meringue Feast

I was invited for Sunday lunch last week so thought that I better whip up something special for dessert. I considered a sundae or something small but felt creative and went all out instead. I had never combined meringue with sponge cake before but had always thought that it looked pretty good. I whipped up a sticky chocolate fudge sauce to pour over the top and used Chantilly Cream for the filling - yum!

Ingredients

FOR THE MERRINGUE

6 Egg Whites
150g Caster Sugar

FOR THE CHOCOLATE FUDGE SAUCE

2 Egg Yolks
150g Sugar
50g Plain Chocolate
3  tbsp Water
50g Butter

FOR THE CHOCOLATE SPONGE

250g Caster Sugar
250g Butter (softened)
4 Eggs
250g Self Raising Flour
6 tbsp Cocoa Powder

FOR THE CHANTILLY CREAM

250ml Whipping Cream
2 tbsp Icing Sugar
1 tsp Vanilla Extract

Method

FOR THE MERRINGUE

1) Preheat your oven to 110C/ 230F/ Gas Mark 1/4 and line two baking trays with greaseproof paper.
On one of the sheets, draw a circle around an 8 inch round baking tin and leave both to one side.

2) Whisk the egg whites in the electric mixer until when lifted, the beater forms a peak in the mixture. Add the sugar, a few spoons at a time and continue to whisk again until the mixture forms a peak when the beater is lifted.

3) On one tray, using a piping bag and star nozzle, pipe the mixture into small shapes like you would icing on top of a cupcake. On the other tray, pipe the mixture so it fills the 8 inch circle shape you drew earlier.

6) Place both trays in the oven and bake undisturbed for 1 and 3/4 hours.

-------------------------------

FOR THE CHOCOLATE FUGDE SAUCE

1) To make a syrup, dissolve the sugar in the water in a saucepan and bring to the boil until it has reached 110 degrees on your sugar thermometer.

2) Whisk the syrup and the egg yolks until the mixture is thick and mousse-like and leave to one side while you melt the chocolate in a heat proof bowl over a pot of simmering water.

3) Leave the chocolate to cool slightly for 5 minutes. Then beat the butter and chocolate together and add the syrup mixture and continue to beat.

-------------------------------

FOR THE CHOCOLATE SPONGE

1) Preheat the oven to 180c/ 350F/ Gas Mark 4 and grease and line an 8 inch round baking tin.

2) Cream the butter and sugar together in your mixing bowl until creamy and pale in colour. Add the eggs and continue to beat until light and fluffy. Then add the flour and cocoa powder, one spoon at a time and beat further until of light and fluffy consistancy again.

3) Pour the mixture into your tin and bake for approx. 40 minutes until firm to touch.

Coffee Lover's Dream Cake

So last weekend I baked something a little over the top for mam's birthday. After being away for the past month what could you expect?! I was raring to get back into my apron and whip up a storm. I baked a two tier coffee lovers dream cake. The bottom tier was made up of a rich mocha sponge with a chocolate and coffee ganache filling and mocha butter cream. The top was more of a traditional coffee cake made up of a light coffee and walnut sponge, a chocolate walnut ganache filling and a smooth coffee butter cream. Coffee is one of mam's all time favourites so I had to go all out for the occasion.

Chocolate Caramel Cupcakes

I absolutely LOVE caramel, so, when Mam arrived home from the supermarket with a few tins of condensed milk I had to make something delicious with it. I always tend to go for Millionaire's Squares or Banoffee, but this time I was adamant to try something else. Mam has been raving about these Caramel Cupcakes she saw on Bakery Boss, so, I decided to try something new and invent my own Chocolate Caramel Cupcake. Despite what you may think, the cupcakes aren't heavy in the slightest. Both the sponge and the butter cream are light and airy which allows for the devilish caramel.

Ingredients
MAKES 12 CUPCAKES

FOR THE CAKE MIX

225g Butter (softened)
225g Caster Sugar
225g Self Raising Flour (sieved)
2-3 tbsp Cocoa Powder
4 Eggs

FOR THE CARAMEL

1 x 397g tin of Condensed Milk
1 tbsp Golden Syrup
50g Brown Sugar
30g Butter

FOR THE CHOCOLATE BUTTER CREAM

150g Butter
300g Icing Sugar
50g Dark Chocolate (melted)
2 tsp Boiling Water

Method
FOR THE CAKE MIX

1) Preheat the oven to 180C/ 350F/ Gas Mark 4 and line your muffin tray with bun cases
2) Cream the butter and sugar together in the electric mixer
3) Once a pale colour, add in the eggs, one at a time and continue to beat
4) Once combined, add the sieved flour, one spoon at a time as you beat
5) Then add the cocoa powder in beat again until all ingredients are combined
6) Put 1-2 spoons of the mix into each bun case and place in the oven for approximately 15 mins until the cupcakes are firm and spring up when touched
7) Leave to cool on a wire tray while you get to work on the caramel and the butter cream

FOR THE CARAMEL

Firstly, you can cheat a little and buy a tin of caramel - it works just as well.
But if you feel like going all out follow these simple steps...

1) Melt the butter and sugar together in a pan over a low heat
2) When combined, add in the golden syrup and the condensed milk and stir continuously
3) Bring the mixture to the boil and then allow it to simmer for approx. 5 mins until it becomes thicker
4) Fill a piping bag with the caramel and stick the nozzle into each bun and squeeze
5) Then leave the buns to sit and use any left over caramel for decoration later

FOR THE CHOCOLATE BUTTER CREAM

1) Cream the butter and icing sugar together in the electric mixer (be patient this may take a while)
2) When light and fluffy, add in the melted dark chocolate, one tsp at a time and beat
3) When combined, add the boiling water, again, a small amount at a time and beat
4) Using your piping bag, pipe the butter cream onto each of the cupcakes, covering the caramel
5) After making sure that the leftover caramel is cool, you can drizzle a small amount over each of the cupcakes for a nice effect.

Mississippi Mud Pie

South Carolina was the place to be last summer when myself and a bunch of friends traveled over to the states on a J1 visa. While there, my keen interest in food and baking had me trying every tasty treat that my broke Irish behind could afford to sample. Although the dessert doesn't originate in South Carolina, my all time favourite had to be Mississippi Mud Pie. This traditional southern dessert with it's rich chocolaty filling and it's whipped cream topping will have you feeling guilty for a week after eating a slice but believe me, it's well worth it! I've baked the dessert on a couple of different occasions since I've been home, and, each time, the delicious smell of the pie in the oven brings me straight back to that sunny southern state.

You might have guessed that the dessert in question is in fact the infamous pie featured in The Help, but, you'll be extremely glad to know that unlike Mini's, my mud pie doesn't have a horrendous secret ingredient!

Recipe adapted from Love Food's gorgeous book 'Bake'.

Ingredients

FOR THE BASE

175g Plain Flour (sieved)
25g Cocoa Powder (sieved)
40g Light Muscovado Sugar
85g Butter (softened)
3 tbsp Cold Water

FOR THE FILLING

85g Dark Chocolate
85g Butter
85g Light Muscovado Sugar
2 eggs (lightly beaten)
100ml Whipping Cream
1 tsp Vanilla Extract

FOR THE TOP

250ml Whipping Cream
100g Dark Chocolate

Method

1) Preheat your oven to 200C/ 400F/ Gas mark 6 and grease your round tart dish with melted butter
2) The water for the pastry works best when it's really cold so place a small glass of water into the freezer at the beginning
3) Sift the flour and cocoa powder into a large bowl and stir in the sugar
4) Add the butter, and, using your fingertips rub the butter into the mixture until it resembles small breadcrumbs

5) Add the tbsps of water until the mixture binds a dough
6) Roll the dough out onto a lightly floured surface - make sure that it's large enough to cover your pie dish
7) Prick the base multiple times with a fork, cover with greaseproof paper, and fill with baking beans. If you don't have baking beans, simply sit a small plate on top and bake in the oven for 10 minutes
8) After the 10 minutes have passed remove the base from the oven and reduce the temperature to 180C/ 350F/ Gas mark 4
9) For the filling, melt the chocolate and butter in a saucepan on a low heat
10) Whisk the sugar and eggs together until smooth and then stir into the chocolate mixture along with the cream and the vanilla extract
11) Pour the mixture over the base and bake for 20-25 minutes until firm

12) When ready, leave to cool while you whip the cream
13) When the tart is fully cool spread the cream over the filling. Then drizzle melted chocolate over the cream using a spoon or, if you want to be extra fancy, fill a plastic food bag with the chocolate, pierce it with a cocktail stick and squeeze the chocolate over the top.

Serve chilled and enjoy!

Cupcake Minis

So I turned 21 this week which came as a bit of a shock to the system with officially being an adult and all that, but, I wasn't making the transition without one final almost tea party! Besides, what's a party without lots of cake? Along with my Chocolate Tower Cake, I decided to make a few batches of cupcake minis in a selection of different flavours for my party.  I went with a batch of vanilla, a batch of chocolate and a batch of lemon drizzle. The cake and buttercream recipes are both extremely easy to follow and I'd definitely recommend giving them a go. Just so you know, each recipe starts out the exact same and the flavours are added nearer to the end.

Ingredients
FOR ONE BATCH OF TWELVE

225g Butter
225g Caster Sugar
4 large Eggs
225g Self Raising Flour (sieved)
Rind of one lemon OR 2 tbsp Cocoa Powder OR 1 tbsp Vanilla Extract

Method
FOR ONE BATCH OF TWELVE

1) Preheat your oven to 180C/ 360F/ Gas Mark 4
2) Cream the butter and sugar together in a mixing bowl until nice and fluffy
3) While the butter and sugar are mixing, line your small cupcake tray with mini cupcake cases
4) Add the eggs to the mixture, one at a time, and continue to beat
5) When combined, add the sieved flour, one spoon at a time, and mix until light and fluffy
6) Add in the flavouring of your choice (the cocoa powder, lemon rind or vanilla extract) and mix again
7) Spoon roughly a tsp of the mixture into each muffin case and bake in the oven for 10 -15 mins (check the cupcakes after 10 mins and leave in if not yet golden brown in colour)
8) Leave the cupcakes to cool fully on a wire wrack before icing - while you're waiting you can get cracking on the buttercream...

Ingredients
FOR THE BUTTER CREAM

50g Butter (softened)
100g Icing Sugar
I tsp Lemon Juice OR 1 tsp Vanilla Extract OR 50g Melted Chocolate and 1 tbsp Cocoa Powder
2 tbsp Boiling Water

Method
FOR THE BUTTER CREAM

1) Cream the butter and icing sugar together in your electric mixer until light and fluffy (the lighter the better)
2) Add in either the lemon juice OR the vanilla extract OR the cocoa powder (if you are making the chocolate cupcake minis, add the cocoa powder first and when combined add in the melted chocolate, one spoon at a time)
3) Continue to beat and add the boiling water, again, one tbsp at a time
4) Beat for a further few minutes and you're ready to decorate

You can then decorate the cupcakes however you wish. I piped the icing using different techniques on each of the different styles and used "Princess sprinkles" which I bought in Lidl.

Ferrero Cupcakes

So I was really in the humour to bake something delicious this week and when I searched by baking press I began to feel a little inventive. I saw the box of unopened Ferrero Rochers that I had been trying to avoid since Christmas and thought why not try something new. I based my recipe on a standard sponge that I tweak for almost every cupcake or cake I bake and decided to add Nutella and crushed Ferreros. I wasn't 100% sure how the cupcakes would turn out but despite my worries, they were a massive hit at home and in work, and Dave, my chocolate monster boyfriend, couldn't get enough of them!

Ingredients

FOR THE CAKE MIX
225g Butter (softened)
225g Caster Sugar
4 large Eggs / 5 medium
225g Self Raising Flour (sieved)
3 tbsp Cocoa Powder (sieved)

FOR THE BUTTERCREAM
200g Icing Sugar
100g Butter (softened)
1 tsp Cocoa Powder
25g Dark Chocolate
1 tbsp Nutella
2 tbsp Boiling Water

EXTRAS

Nutella

Method
FOR THE CAKE MIX

1) Preheat your oven to 180C/ 350F/ Gas Mark 4 and line your muffin tray with muffin cases
2) Cream your butter and sugar together  in the mixing bowl
3) When the mixture is creamed, add the eggs, one at a time
4) When the mixture is fully combined, begin to add the flour, again, one spoon at a time
5) When all of the flour has been added, add the cocoa powder
6) When fully combined, stop the beater and spoon one large dollop of the mixture into each of the bun cases
7) Then bake in your preheated oven for 15-20 minutes until the buns are firm to the touch
8) When baked, leave the buns to cool on a wire rack while you make the buttercream.

FOR THE BUTTERCREAM

1) Cream the butter and icing sugar together in your mixer until white and fully combined (this may take a while -be patient)
2) Add the cocoa powder and continue to beat until combined again

4) When melted, add the chocolate to the mixer while it is beating - one spoon at a time
5) Leave to mix and finally add in the boiling water while beating again
6) Beat for a further few minutes and leave to one side

To Assemble

1) Using a knife, cut a circular piece of the bun from each and leave to one side
2) Using a spoon, add a dollop of Nutella and a hazelnut to each cupcake and put the piece you cut from the cupcake back on top

3) Using your piping bag, pipe the butter cream onto each of the cupcakes, covering any Nutella that may be on the surface

4) Cut each of the Ferrero Rocher sweets into two or three and stick a piece on top of each cupcake (You can also add the crumbs for a nice effect)

Chocolate Orange Triple Layer Cake

I baked this chocolate orange triple layer cake for a friend who loves chocolate but isn't a huge fan of traditional fruit cake this Christmas. The more I look at it though, I think that it would be a perfect celebration cake to serve at any party on New Years Eve. There are a couple of different elements involved in making this cake - the orange and chocolate marble sponge, the chocolate orange buttercream & the dark chocolate orange ganache - but, it's still not overly difficult to make and believe me it's well worth the effort.

Ingredients
FOR THE MARBLE SPONGE...
225g Butter
225g Plain Flour (sieved)
4 Eggs
2 tbsp Cocoa powder
Rind of 1 large Orange

Method
FOR THE MARBLE SPONGE...
1) Preheat your oven to 180C/ 350F / Gas Mark 4, grease a 6" round baking tin with melted butter and line with greaseproof paper
2) Cream your butter and sugar together in your mixer
3) When the mixture is of a creamy consistency, add in the eggs, one by one as you continue to mix
4) Add the sieved flour to the mixing bowl, one spoonful at a time and mix until the mixture is light and fluffy
5) Split the mixture in half and to one half add the orange rind and to the other add the cocoa powder
6) Pour some of the dark mixture into your lined tin, then some of the white mixture and repeat until all batter is in the tin
7) Using a metal spoon, draw "S" shapes into the batter to create a marble effect
8) Bake in the oven for approx 40 mins and when done leave to cool on a wire tray over night

You can make your Ganache and Buttercream while the cake is cooling, but don't assemble until the cake is fully cool.

Ingredients
FOR THE CHOCOLATE BUTTERCREAM...
200g Icing Sugar
100g Butter (softened)
50g Dark Chocolate (melted)
1-2 tbsp Boiling Water

Method
FOR THE CHOCOLATE BUTTERCREAM...
1) Using your electric mixer, cream the butter and icing sugar until the mixture is really light and creamy
2) Add the melted chocolate to the mixture, one spoonful at a time and mix until all is combined
3) Then add one tbsp of boiling water and mix on a high speed to make the buttercream that little bit lighter and more fluffy.
4) Leave the buttercream to one side while you make the ganache

Ingredients
FOR THE DARK CHOCOLATE & ORANGE GANACHE...
280g Dark chocolate
130g Whipping cream
2 tbsp Butter
2sp Cointreau

Method
FOR THE DARK CHOCOLATE AND ORANGE GANACHE...
1) Break the chocolate into pieces and melt in a pot with the butter
2) When melted and combined, add in the cream and continue to stir
3) When combined again, add in the Cointreau and combine

To assemble (when the cake is fully cool)

1) Split the cake in three using a sharp bread knife
2)  Place the bottom layer on a cake board or plate and spread a layer of buttercream over it using a pallet knife
3) Place the next layer of sponge on top and spread a layer of ganache followed by a think layer of buttercream
4) Place the final sponge on top and cover the sides of the cake with the chocolate buttercream
5) Then spread the remaining ganache over the top of the cake in a thick layer and finally, using a piping bag, pipe the remaining buttercream around the bottom and top edges of the cake

I used Dr. Oetker chocolate stars and gold shimmer food spray which I won through an online competition this month to decorate the cake. I'm delighted I tried them as I really loved the effect and will definitely be using them in future!
